The 35 years old vines are planted on a clay limestone soil, on a hillside, which gives the berries their maturity. The planting density is about 4,500 plants per hectare. They work their soils mechanically and practice reasoned agriculture on the property since 1990. Short pruning is done in order to reduce yields and obtain the best quality berries.
Winemaker’s notes
The harvest is carried out at optimal maturity, followed by sorting on a table in the cellar. Vinification is conducted under controlled temperature conditions, in accordance with the progress of fermentation. A long maceration period of eight weeks is employed to produce deeply coloured wines focused on aromatic expression. The wine is then aged in vats for 18 months before bottling.
